Ivo's Professional Line is a series of knives manufactured in Portugal. Punched blade with fully cast handle. The series is designed for chefs who want a functional and affordable quality knife. The blade is made of German high-quality stainless steel with chrome-molybdenum-vanadium (X50 Cr Mo V15). The handle is made of PP - polypropylene. The knives in the series satisfy HACCP guidelines.

About the Salmon Knife

A salmon knife is specially developed for cutting salmon and other fish. It has a long and narrow blade that makes it easy to cut thin slices of the fish. A good salmon knife also has a ball point on the blade, which makes it easier for the fish to escape from the knife blade.

Maintenance

The knives are easy to maintain and withstand steam up to 130°C, but we recommend washing them by hand. All knives deserve special care and attention when it comes to maintenance. Ideally, you should clean the knife immediately after use with mild soapy water and then rinse and dry it with a soft cloth.
