The unique black blade provides an exceptionally light and sharp knife without sacrificing the life of the knife. The DLC coating lies in a one micrometer thick layer over the strong Niobium steel to together provide a completely unique knife blade.

The knife blade is also unique in that it is hollow ground on one side and V-ground on the other.

About the Janus series

The hallmark of the JANUS collection is the special black blade, which symbolizes high quality and functionality thanks to the advanced DLC (Diamond-Like-Carbon) coating. This special coating is designed to withstand high loads and optimizes the functional properties of the blade. The carbon layer, which is only a few micrometers thick, is resistant to acids, bases and extreme temperatures. In addition, it has low friction values and is highly scratch resistant.

Handcrafted and designed to be ergonomic and durable, Janus knives are a great choice for those who appreciate quality and precision in the kitchen.

Maintenance

Please note that the knives should not be cleaned in the dishwasher!

We recommend washing with mild soapy water immediately after use and a quick rinse and dry to ensure a beautiful and sharp knife for a long time to come.

To preserve the shine and suppleness of the handles, you should care for them regularly with suitable oil.

The distinctive feature of the JANUS series is the black DLC coating on the blade. Diamond like Carbon refers to a pure carbon layer created in a very complex process. Carbon atoms are shot onto the leaf surface and form a hard, black layer of pure carbon that is chemically inert. This means that the blades in the Janus series are not only visually special, but also technically. They have a higher surface hardness and are completely resistant to acids, salts and other chemical influences.

Abrasives such as silicon carbide are often used in household sponges. These are capable of damaging the DLC coating. Therefore, do not generally use cleaning agents that contain abrasives. A damaged coating no longer protects against corrosion.
